Roaster description

This is our first time working with Alirio. This Pink Bourbon is delicate and floral with bright citric acidity and a long, sweet finish. In the cup we get lemonade, white florals and grapefruit. This is an extra-light roast variant of our light roast Alirio. We recommend extra-light profiles for experienced brewers willing to wait up to 40 days after roast for best results. Extra-light profiles sacrifice initial sweetness and intensity for clarity.

Alirio Muñoz Ortega and his wife, Anayibe, own the farm El Placer. Alirio and Anayibe work alongside many other community growers and local neighbouring farmers, making El Placer a staple spot in their community. As a collective, the coffee growing community in Bruselas is striving to eliminate any use of synthetic chemicals on their farms, moving towards a form of agriculture that is more sustainable and organic. The cherries are picked as ripe as possible and floated to eliminate any overripe or underripe outliers. The cherries are then left in plastic bags to begin an initial fermentation process for 36-40 hours. From there, the cherries are de-pulped and fermented for another 36-40 hours before they are washed. To ensure consistency, Alirio will take some of the cherries throughout their fermentation and place them in water to see if their mucilage washes off easily. From those results, he determines the best possible time to de-pulp them. The coffee is sun-dried for 15 days, and then dried under a shade cloth for another 10 days. variety iconVariety

Pink Bourbon is a variety primarily grown in Huila, Colombia, and while newer, it has quickly grown in popularity for its bright, sweet, and aromatic profiles. Push super hard (98ºC).

May 30, 2025 — interestingly, got bad results at 95ºC 4.7, pleasant results at 92ºC 4.5, and pleasant results at 98ºC 5.0 aggressive pours. Implies a brewing error for the first brew.

June 2, 2025 — super nice. Great balance of tart, sweet, floral. Favorite of recent PBs so far.

June 7, 2025 — did comparative brews with high and low temp, high temp definitely the way to go. Surfaces more florals and diverse fruits while muting off flavors. Starting to decline a bit — prime was probably 6 to 8 weeks. Main issue was that it felt like this took a long time to open yet faded relatively quickly. Also this bean REALLY needs slightly harder water.
