We are pleased to introduce this remarkable Finca Deborah Vivid. In the cup, expect delicate floral notes of violet and jasmine, balanced by bright touches of bergamot and raspberry. Processed through carbonic maceration with a washed finish, this coffee reflects thoughtful innovation, delivering a refined and elegant flavor profile with subtle complexity.
Process:
The VIVID process starts with harvesting perfectly ripe Geisha cherries reading 21-24 on BRIX.
The cherries are then carefully selected for a second time before processing. After selection, the cherries are deposited into a hermetically sealed tank for an extended period exceeding 50 hours. The coffee is constantly monitored and data cataloged. PH, temperature, and CO2 levels are the primary units carefully observed. Ambient temperatures are monitored and controlled to ensure linearity in the processing as well, with periodic infusions ensuring the fermentation process is controlled.
After the required time inside the CO2 infused tanks, the cherries are removed. The cherries are then milled and de-fruited, rinsed in fresh water, then placed on a shaded, 3 tiered, raised African bed system designed by Jamison. Direct sunlight is avoided as the intense UV and heat can cause cracking in parchment thus exposing the delicate grain to oxidation and damage.
Temperatures, heat, and humidity are strictly controlled inside the dry houses and are maintained within certain parameters.
When the coffee has dried to approximately 11% it is bagged in grain-pro and stored in Bodega where temperatures are cool and stable.
Roast-wise, looks equally light to TPC on the light end. There’s more bean variance though and the darker beans are way darker. Have to assume TPC uses a color sorter.
Overall not too sure what to make of this one. It’s very delicate and floral-forwards. Clarity doesn’t taste super high. The actual taste itself is kind of a muddy mix of mild sweetness and mild acidity; hard to discern what’s going on. The drawdown was quite a bit slower than the TPC brew so maybe going coarser will help. But unlike the TPC this is lower in clarity while also being lower in intensity. From the description this is meant to be more delicate anyways, but it’s just okay to me. High 6 I guess. Probably wouldn’t buy a whole bag of this. Note that I’m comparing this against incredible coffees — in a vacuum this is really good. Very expensive though.
