BC3.5 Drum - Having roasted this same coffee last year at a previous job, I knew it would need a slightly softer approach, and would shine with a lower end temperature. I charged at medium settings, let it spend a slightly longer time in dry to develop complexity, and then sped through Maillard to give it some solid acidity. It needed a little extra heat after first crack, dropped right around 30 seconds of dev. Final result is a delicate, soft, floral-forward cup with a lovely tart cherry sweetness and oolong tea in the finish.

Haven’t had Typica in a while, this one seems really promising.
Like the Rwanda Fugi Ikizere Washed there is quite a lot of bean size variance and thus color variance. Significantly lighter, more overall variance than something like September with both more Quaker-looking beans and dark beans.
June 17, 2025 best results with slightly finer grind, midrange temp, lower ratio. Rationale: flavor is mild but extracting more gets some unwanted boring flavors. Reminds me of some powdered sugar pastry with a bit of cherry preserve. Kind of similar to Ecuador - Chito Mejorado (Extra Light) but cherry instead of strawberry, and less intense overall.
June 20, 2025 when brewed cooler at 92, less sweetness and big oolong notes. Makes this too savory and astringent for my liking.
